tofu scramble

I often make time to cook at home as I do enjoy it far more than eating out. I thought I would share with you an easy vegan breakfast recipe with you. When I chose to go vegan I had to make sure that I eat foods that are nutritious and that give me enough energy to go about my day with practice and teaching.

There is an element of freshness to most plant based dishes, this is bound to purify our minds and keep our thoughts positive. No doubt a diet that contains a variety of plant-based foods appears to contribute to overall health and wellbeing, and a lower risk of conditions such as obesity, diabetes, and heart disease.


Tofu is an important source of protein, especially for vegans and vegetarians and it is now available in almost all the supermarkets.

Here are the ingredients you'll require:

  • Tofu ( I use 1 pack for serving 4 people)

  • Leak (thinly sliced)

  • Tomatoes (here I used a mix of 2 big red tomatoes cut in small pieces and a hand-full of cherry tomatoes slices in half) do not peel.

  • Mushrooms (thinly sliced)

  • Spinach

  • Turmeric

  • Sesame seeds (optional)

  • Dried herbs (of choice, here I used Italian mixed herbs)

  • Salt (my favourite is Himalayan salt)

  • Pepper

  • Chilly flakes

  • Olive oil (did you know that the organic store in Al Manzil/downtown refills your bottle)

Start to fry the leaks in olive oil, once they turn golden add in the cut tofu. Sprinkle sesame seeds, slat, pepper, dried herbs.

Mix well, I try not to smash the tofu. Add the mushrooms and turmeric. Once the mushrooms are soft add in the cut tomatoes and sprinkle some chilly flakes.

I sometimes pour in a little bit of Pomi tomato sauce just to make is more juicy, instead you can also add more tomatoes if you like. Once the tomatoes are soft toss in the spinach. Mix well et voila! How easy was that!?

Serve with toast and Olive butter. Bon appetite :)
